Peanut butter and chocolate green smoothie

In my twenties, I used to think that weddings came in waves.

During the year, I might have one or two friend's weddings. And then suddenly this summer... eight in a row!!!

In my thirties, I thought babies came in waves too.

I have six good friends who are all pregnant right now, and a handful of friends with toddlers at home. I was surprised to find that one of the most valuable things I could offer some friends—perhaps even better than a baby blanket—is a list of resources and quick-cooking recipes.

One of the quick recipes that you can make for breakfast, lunch, a snack, or even dessert - a chocolate green smoothie with peanut butter.

When it comes to quick, easy, fresh, and healthy recipes, let's be real—it's hard to beat a green smoothie. Especially when it's peanut butter and chocolate, it also happens to be naturally sweetened with honey, and it's high in protein.


Components:

  • 1 frozen chopped banana

  • 1 cup fresh spinach

  • 1 cup ice

  • 1 cup milk (your choice - milk, almond drink, etc.)

  • 3 tablespoons peanut butter

  • 3 tablespoons unsweetened cocoa powder

  • 2 tablespoons chia seeds (optional)

  • 1-2 tablespoons honey (if necessary)

  • ½ teaspoon vanilla extract

  • Optional topping: mini semi-sweet chocolate chips

Blend together until creamy, pour and enjoy!
