The fisholin originates from France, from the Languedoc region (southern France).
The fruit is large and suitable for both pressing and oil. The tree is medium in size and has medium growth, tends to grow with an open and airy landscape and has one central trunk. Suitable for growing in a variety of soils and climatic conditions.
Despite its tendency to be fertile and have high yields, its oil content is medium-low: between 15%-18%.
Pichulin has another clone with smaller fruits that was discovered in Morocco (and is therefore called Pichulin-Moroccan, as opposed to Pichulin-Languedoc) and its flavor is more delicate and less intense and dominant than its big brother from France.
The figwort is common in many countries in the Mediterranean basin, the main ones being Italy and Israel. Among other things, it is considered a good fertilizer for the Barnea.
The color of the oil in fisholin, like the koreniki, is less affected by the degree of ripeness of the fruit (early harvest = green oil, late harvest = light golden oil), so even fruit that is harvested green will yield a light golden and slightly opaque oil.
The oil is considered to be very rich in flavor, with a characteristic bitterness and a pronounced pungency. Very fruity and with hints of herbs such as hyssop and thyme, green olives and even honey.
It is considered an oil with high health values due to the large amount of antioxidants (polyphenols) it contains.

Who are we?
The Eretz Geshur olive oil production process includes complete control over every step of the process: from the location of the plantations and the type of soil, through the self-production of the seedlings, to the harvesting process, stopping the oil and storing it in stainless steel tanks in the modern oil press.
Extra virgin olive oil is defined as oil produced by mechanical means only and not by chemical extraction.
The first step in oil production is crushing the olives to obtain a uniform paste. This can be done with a stone that crushes the olives or with a steel crusher with knives or hammers.
The use of Geshor's mechanical harvester allows for the harvesting of a large quantity of olives in a short period of time, and their arrival at the oil press within 2-4 hours of the start of the harvest that day. This speed allows for the immediate stopping of the oil, before the oxidation processes begin. In this way, we prevent the formation of unwanted off-flavors and an increase in acidity. The strictness continues in the oil press, where we maintain a cold pressing temperature and minimal mixing time to preserve the healthy ingredients and aromas unique to each variety.
