A distinct fruity aroma tends towards pungency and bitterness. Due to its taste, this oil is suitable for cooking and frying.
Acidity level: 0.31%.
Probably the oldest olive variety in the world! The first variety to be domesticated, and it even happened here in the area of Israel and Lebanon.
A variety originating in Lebanon and the most common in Israel. Olives stand out in their flavor, both for food and oil. An aroma reminiscent of tomatoes at the beginning of their ripening.
One of the most common varieties in the Middle East and the most common variety in Israel, it is also the dominant variety in olive growing in the country in the dry season (without irrigation and treatment). The variety is characterized by a great variety of tree forms and ranges from completely bushy trees to semi-shrubby trees with a wide central trunk and a spreading, open landscape. It is not particularly suitable for advanced harvesting methods (harvesting) and its high sensitivity to the peacock eye, the tiger moth and the olive fly, in addition to its very high alternation, make it unpopular in intensive vineyards.
By the way, Syrian is a corruption of the word Tzuri, meaning that the variety originated from Tyre in Lebanon and not from Syria.
The olives are slightly elongated with a pointed tip, are medium in size, and are suitable and very common for pressing. The oil from the Syrian variety is the most common in Israel, most of it from Baal vineyards, and because of this it has earned the name of a dominant oil and very concentrated in its flavors. This name is of course partially correct and is limited only to the oil that comes from Baal vineyards. In intensive vineyards the oil tends to be significantly more delicate and "friendlier" to the user.
Its oil percentage is high and easily exceeds 20%. The oil has a pronounced fruity aroma and when you taste the oil, you can really imagine an olive (fruit) in a liquid state. The oil is characterized by pungency and bitterness that can be subtle or dominant, depending on the form of cultivation. The oil is considered an oil that retains its flavors over time.

Who are we?
The Eretz Geshur olive oil production process includes complete control over every step of the process: from the location of the plantations and the type of soil, through the self-production of the seedlings, to the harvesting process, stopping the oil and storing it in stainless steel tanks in the modern oil press.
Extra virgin olive oil is defined as oil produced by mechanical means only and not by chemical extraction.
The first step in oil production is crushing the olives to obtain a uniform paste. This can be done with a stone that crushes the olives or with a steel crusher with knives or hammers.
The use of Geshor's mechanical harvester allows for the harvesting of a large quantity of olives in a short period of time, and their arrival at the oil press within 2-4 hours of the start of the harvest that day. This speed allows for the immediate stopping of the oil, before the oxidation processes begin. In this way, we prevent the formation of unwanted off-flavors and an increase in acidity. The strictness continues in the oil press, where we maintain a cold pressing temperature and minimal mixing time to preserve the healthy ingredients and aromas unique to each variety.
